Is there a way to adjust the temperature to which the Powermax 185 heats the water? I'd be happy to have my water much cooler and I'm thinking that heating it to this super-hot temp is probably wasting energy for me too.

Yes. There is an adjustable blender valve behind the boiler front panel for this.

Is this likely to have a drastic affect on Gas usage? My 185 is using far more gas than I used in my previous property.

No. The effect will be marginal, other than the fact that you'll tend to use more hot water once it is nice to use!
